I'd been craving carrot cake, so I decided to experiment with one of my favorite frosting recipes ("Butter-Cream Cheese Frosting" from 1,000 Vegetarian Recipes by Carol Gelles) to see if I could low-carbify it.½ c cream cheese, softened (4 oz)
1 T butter, softened
1 T honey
¼ t vanilla
Beat together all ingredients until fluffy.
