8 slices bacon (½ lb)
⅔ c almond butter (6 oz)
6 eggs
4 T butter, softened
1½ t baking powder
3 T maple syrup
- Cook bacon until crisp. Drain between layers of paper towels.
- Blend together remaining ingredients until smooth.
- Crumble bacon into batter and stir until well mixed.
- Brush a small amount of butter or oil over cooking surface.
- Pour a generous ⅓ c batter onto waffle iron and cook for 2½-3 min.
- Repeat with remaining batter, greasing surface between every other waffle.
- Waffles may be enjoyed immediately or frozen and toasted.
